How to make and keep meat tender when cooking:
When cooking things like lamb cutlets/chops cook them in a saucepan not in the grill or oven. You also want to use canola oil instead of olive oil for the saucepan. Before putting your lamb into the saucepan sprinkle it with the necessary herbs and spices and make sure not to remove any pieces of excess cartilage leave that until the end. Pour the canola oil into the saucepan and preheat for a minute on high. Cut up a decent sized slab of butter and place it in the pan let it melt to about 3/4 of the way before putting in your lamb.
If available sprinkle some ground up chilli into the pan and allow it to settle into the canola oil, let the meat cook for approximately 10 minutes (2 minute intervals, with flipping the sides over). Remove the meat and place it on a plate make sure that it wasn’t over cooked.
Sit down and start eating.
